Ancient Grains with Honey Balsamic Chicken

Ancient Grains with honey balsamic chicekn

As much as I enjoy a classic chicken and rice recipe, using ancient grains to accompany the chicken makes for a much more leaner and healthier meal. The grains themselves have their own unique texture and earthy taste that pairs well with the balsamic marinated chicken. This is a delicious, belly filling meal to enjoy with your family!

Cook Time: 35 Minutes

Serves 4

4 large chicken breasts, cleaned and butterflied

2 cups Ancient grains mix (¼ cup white quinoa, ¼ cup red quinoa, buckwheat, millet)

4 cups chicken stock

½ cup balsamic vinegar

3 tablespoons honey

1 table spoon sriracha

Salt

  • In a medium size pot add a drizzle of olive oil and toast the ancient grains over a medium low heat
  • Add the chicken stock, a dash of salt and pepper, and bring to a boil.
  • Reduce to a simmer and cook for about 20 minutes or until grains are tender
  • In a small frying pan, toasts the pine nuts and golden raisins over a low heat until pine nuts exude a toasty scent and add to the grains
