As much as I enjoy a classic chicken and rice recipe, using ancient grains to accompany the chicken makes for a much more leaner and healthier meal. The grains themselves have their own unique texture and earthy taste that pairs well with the balsamic marinated chicken. This is a delicious, belly filling meal to enjoy with your family!

Serves 4
Ingredients
4 large chicken breasts, cleaned and butterflied
2 cups Ancient grains mix (¼ cup white quinoa, ¼ cup red quinoa, buckwheat, millet)
4 cups chicken stock
¼ pine nuts
¼ cup golden raisins
½ cup balsamic vinegar
3 tablespoons honey
1 table spoon sriracha
Salt
Pepper
Oregano
Olive oil
Instructions
- In a bowl, mix the balsamic, honey, and the sriracha
- Season the chicken breasts with the salt, pepper, and oregano and add them to the bowl and let them marinate
- In a medium size pot add a drizzle of olive oil and toast the ancient grains over a medium low heat
- Add the chicken stock, a dash of salt and pepper, and bring to a boil.
- Reduce to a simmer and cook for about 20 minutes or until grains are tender
- In a small frying pan, toasts the pine nuts and golden raisins over a low heat until pine nuts exude a toasty scent and add to the grains
- In a separate frying pan, cook the chicken over a medium high heat for about 4 minutes on each side
- Fluff the grains with a fork
- Serve with the chicken and enjoy
