A great alternative to rice is couscous, the food so nice they named it twice. Couscous has been a staple in Mediterranean and Middle Eastern diets for centuries. It’s lighter and fluffier than rice and when eaten, it does not leave you with that overstuffed feeling. When accompanied by a finely seasoned piece of salmon, it makes for a symphony of delight and flavor in your taste buds that will have you asking for second and third helpings.

Cook Time: 5 Minutes for couscous
10 Minutes for salmon
Serves 4
Ingredients
4 pieces of salmon
2 tablespoons butter
1 tablespoon salt
1 tablespoon black pepper
1 tablespoon of dill
10oz of couscous
½ cup of raisins
2 ¼ cups of water or stock (preferably fish or vegetable)
½ cup of crumbled feta
Instructions
For the salmon
- Mix the salt, pepper, and dill in a bowl
- Season both sides of the salmon with the spices
- Add butter to pan and set to medium flame
- Cook the salmon for 5 minutes on each side
For the couscous
- Add the water, or stock, into a sauce pan over a medium-high heat
- Wait until it starts to boil
- Add the couscous and stir. Let cook for a little
- Add the raisins and feta and stir once more
- When water has evaporated, remove from heat and let sit. At this point it will be nice and fluffy.
- Plate the couscous and add the salmon on top
- Enjoy
