Chicken souvlaki skewers

Souvlaki (Mediterranean Chicken Skewers)

Ingredients
  

  • 3 large chicken breasts, cleaned, butterflied, and cubed prior to cubing, using a fork, poke holes in the chicken
  • 1 bottle beer of your choosing, preferably a light flavored beer
  • Juice from 1 freshly squeezed lemon
  • Olive oil
  • Kosher Salt
  • Black Pepper
  • Oregano
  • 4 sprigs fresh rosemary
  • 6 sprigs fresh thyme
  • Skewers
  • 2 large Ziploc bags

Method
 

  1. Separate the chicken into the two Ziploc bags
  2. Add a tablespoon of olive oil, ½ the beer, ½ the lemon juice, 2 sprigs of rosemary, 3 sprigs of thyme, salt, pepper, oregano into each Ziploc bag, seal, and mix
  3. Let it refrigerate anywhere from half an hour to 3 hours, depending on how much of a flavor you want
  4. Take it out and let stand for about 15 minutes
  5. Put 3 or 4 pieces, depending on size, on the skewer
  6. Mix a little bit more of the salt, pepper and oregano and sprinkle a dash over the chicken skewers
  7. Over a medium-high heat, grill the chicken skewers for about 5-7 minutes on each side, until the color changes and you see char marks
  8. Drip a little bit of lemon juice if you’d like and serve and enjoy!
