Leftover Croquettes

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings: 16 croquettes
Course: Appetizer, Dinner, Lunch

Ingredients

  • Leftover mashed potatoes
  • ½ cup leftover ham or turkey diced and cooked; I used both
  • ½-1 cup shredded cheddar cheese or smoked gouda amount depends on how much leftover mashed potatoes you have
  • 1 egg
  • Kosher salt
  • Paprika
  • Black pepper
  • Flour for coating
  • Canola or vegetable oil for frying

Method

  1. In a shallow bowl, add 1 and ½ cups of flour and then season with the salt, pepper, and paprika
  2. In a large bowl, add the mashed potatoes, ham, turkey, cheese, and the egg. Season with the salt, pepper and paprika and combine well. If you have any other leftovers such as stuffing, feel free to add it to the mixture
  3. Coat your hands with some of the flour so the mixture will not stick to them and form the mixture into small discs about ½ inch thick. Coat the discs with the flour and carefully stack until the entire croquette mixture has been used
  4. Add ¼-1/2 cup of oil to a non-stick skillet, Dutch oven, or frying pan and heat over a medium flame
  5. Fry the croquettes until golden brown on each side, about 4 minutes
  6. Remove from oil and place on a paper towel lined plate. Let them cool
  7. Serve and enjoy
